Salmon Fritters

I've always had a fear of leftover cooked fish and all its cold clamminess. That is, until, when recently faced with some leftover salmon, I searched the internet for “what to do with leftover fish” and changed my world forever. Leftover cooked fish can be used in fish tacos, stews, salads, sandwiches and fish cakes. Who knew? The key is to either gently bring the fish up to room temperature or reheat it for a very short amount of time.  Salmon cakes sounded the most appealing to me so I faced my fear.

This weekend, being strapped for cash and in saving mode for upcoming Christmas shopping, I tried to spend little to no money.  This means I was draped on the couch all day Saturday watching cooking shows and reading library books.  For lunch I made a sandwich with all the leftovers in the fridge; pan seared pork, wilted radicchio, candied yams, smoked gouda and arugula.  But what I thought might be a wildly inventive sandwich ended up tasting like something out of a dumpster.

Salmon, Cherry Tomatoes and Fennel in a Pouch

Don’t let city living keep you from growing fresh herbs!  Do it on your fire escape, window sill or rooftop.  All herbs need 6-8 hours of direct sunlight and plenty of water.  Growing your own keeps you well stocked with as little or as much of an herb as you need for a very small price.  Fresh herbs also have a wildly different flavor than their dried counterparts.  Fresh thyme and oregano give this salmon dish a bright, clean, lemony burst!
