Beet and Goat Cheese Tower

* From the "A Week of Farmers Market Meals" Collection :  Brigher and tastier than the Tower of Pisa, this leaning structure of roasted beets and creamy goat cheese is a sight to behold.




Makes 1 serving

1 small roasted beet
3 slices goat cheese
4 basil leaves
1 tablespoon balsamic vinegar
1 teaspoon olive oil
Coarse salt
Freshly cracked black pepper

Cut beet in 4 even slices and sprinkle generously with salt and pepper.  Layer a slice of goat cheese and a basil leaf in between each beet slice until stacked completely.  Top with more torn basil.  In a small saucepan heat balsamic vinegar until it is reduced by half.  Add balsamic to olive oil, whisk and drizzle over beet tower. Sprinkle with a bit more coarse salt and pepper and serve.
