Farmers Market Crustless Quiche

* From the "A Week of Farmers Market Meals" CollectionQuiche...what a wonderful way to use your farmers market finds.  Take a slice of this to work or on a picnic, serve it warm or at room temperature with tons of fresh parsley on top and you've got a complete meal with all the essentials!




Makes 6 servings

2 scallions, washed and sliced thinly
2 tablespoons olive oil
2 teaspoons garlic, minced
6 eggs, beaten
3/4 cup half and half
2 cups cooked vegetables or uncooked leafy greens, chopped
1 cup cheese, shredded or crumbled
1 small handful parsley, chopped roughly
1/2 teaspoon coarse salt
8 turns of freshly cracked black pepper

Preheat oven to 375 degrees and prepare a greased oven safe pie dish.  Heat olive oil in a saucepan over medium high heat and saute onions until soft, then add in garlic and cook until fragrant, about a minute and then turn off the heat.  In a large bowl, combine eggs, half and half, vegetables, cheese, onion/garlic mixture, salt, pepper and half of the parsley,  mix well to coat.  Pour everything into the pie dish and bake in the oven for 35 minutes or until eggs are set and golden brown on top.  Let cool and sprinkle the last of the fresh parsley on top, serve.
