Yogurt Cucumber Chicken Salad

Inspired by tzatziki, this cool and crunchy version of chicken salad is healthier than the original and much more fun on the palate.  Thick Greek yogurt replaces mayo and cucumber is a juicy alternative to celery.

Makes 2 small servings or 1 large serving

1 cup chicken, cooked and shredded
1/2 cup plain Greek yogurt
1/2 green onion (white and light green parts only), chopped finely
1-2 teaspoons fresh lemon juice (to taste)
1/2 small cucumber, seeded and diced
1/4 teaspoon coarse salt
3 turns fresh cracked black pepper

Pat the diced cucumber dry with a paper towel.  In a bowl, combine yogurt, green onion, lemon juice, cucumber, salt and pepper.  Add in shredded chicken and mix well until fully coated.  Serve on whatever you choose!


Serve on bread, crackers, lettuce cups, pita, salad or a wrap
