Chocolate Brownie Cookies

Chocolate Brownie CookiesValentine’s Day is for avoiding Valentine's Day pre-fix menus and eating mass quantities of chocolate. I'm a sucker for seasonal candy and especially look forward to Cella's Chocolate Covered Cherries being widely available in the Valentine heart-splosion section of the Duane Reade throughout February.  This brownie cookie recipe is another chewy way to get your chocolate fix with plenty to spare for hungry co-workers, chocoholic friends and significant others.  In honor of Valentine’s Day, I’ve compiled a list of some of my favorite, awesome, non-generic love song lyrics:

 Chocolate Brownie Cookies

Makes 3 dozen cookies

1 pound semisweet chocolate, chopped
4 tablespoons unsalted butter
4 large eggs, at room temperature
1 1/2 cups sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1/2 cup all-purpose flour, sifted
1/2 teaspoon baking powder
One 12-ounce bag semisweet chocolate chips

1.  In a large bowl set over a saucepan of simmering water, melt the chopped chocolate with the butter, stirring occasionally, until smooth, about 7 minutes.

2.  In another large bowl, using an electric mixer, beat the eggs and sugar together at medium speed until thick, about 5 minutes. Add the vanilla and salt and beat mixture again. With a rubber spatula, fold in the melted chocolate, then fold in the flour and baking powder. Mix in the chocolate chips. Scrape the batter into a shallow baking dish, cover and freeze until well chilled and firm, about 1 hour.

3.  Preheat the oven to 350° and line 4 baking sheets (or bake cookies in separate batches if you don’t have enough baking sheets) with parchment paper.  Scoop 2-tablespoon-size mounds of dough onto the prepared baking sheets, about 2 inches apart. Bake for about 10 minutes, until the cookies are dry around the edges and cracked on top. Let the cookies cool on the baking sheets for 10 minutes, then transfer to a rack to cool completely before serving.  These are best eaten soon after baking, otherwise they can benefit from a few seconds in the microwave.

  1. I actually refer to Valentines Day as Steak and Lobster Day! Instead of pre-fixed crazy menus my husband and I always go and get awesome and affordable steak and lobster (since the sales are GREAT that day) and make our own feast! You cookies look delish! Chocolate makes all holidays better.
