Date and Almond Oatmeal




It feels like winter has been here forever.  I'm so ready to stop wearing snow boots and hats and gloves and coats.  At this point I have white sandy beach wallpaper on all my devices and I'm browsing resort wear online.  It's no use, because Punxsutawney Phil saw his shadow before shooting out of De Blasio's hands.  There are six more weeks of this meat locker.  Here's a good hot breakfast idea for your cold mornings...

RECIPE

Makes 1 serving

1/3 cup quick cook steel cut Irish oats
1 cup water
2 tablespoons milk (optional)
2 dates, pitted and chopped
1/8 cup slivered almonds
Maple syrup (optional, for drizzling)

1.  Add the water and oatmeal to a pot over medium heat.  Bring it to a boil and then reduce the heat to very low.

2.  Let the oatmeal gently simmer for 5-7 minutes.

3.  In the last minute of cooking, add the dates, almonds and milk (if using) and stir to combine.

4.  Spoon the oatmeal into a serving bowl and drizzle with a bit of maple syrup and feel the comfort!
